Ingredients:
- ½ katori boiled peanuts
- 1 medium size chopped onion
- 1 medium size chopped tomato
- 1 tblsp grated cucumber
- 1 tblsp grated carrot
- ¼ cup freshly grated coconut
- 1 teaspoon lemon juice – can be added more or less
- 1 tablespoon chopped coriander leaves (cilantro)
- salt as per taste
- chilli flakes
- pepper powder
Method :
- take a mixing bowl and add boiled peanuts in it
- add all chopped and grated veggies along with coriander leaves
- mix well
- add grated coconut , lemon juice in it
- mix well and add salt , pepper powder and chilli flakes in it
- mix well and serve protein and fiber rich salad bowl garnished with coriander leaves
