*Ingredients*
A. *Outer Covering*
• rice flour - 1 cup
• milk - 1/2 cup
• water 1/2 cup
• salt -pinch
B. *stuffing*
• grated fresh coconut - 1 cup
• gulkand - 2 tblsp
• golden kishmish - 10-15
• cardamom powder.- 1/2 tsp
• nutmeg powder - 1/4 tsp
• finely chopped almonds and cashews - 1 tsp
C. *Other ingredients*
• kesar
• ghee
*METHOD*
A *Stiffing*
1. heat the pan add coconut and gulkand in it
2. mix well
3. cook it for 3-4 min (til coconut cooks and evaporate 80% water)
4. add kishmish , nutmeg powder and cardamom powder, chopped nuts in it .. mix well
5. cook it for 2 minutes
6. add 1 tsp ghee in it
7. keep it aside and cool down completely
8. till then make outer covering
B. *Outer Covering*
1. heat the pan add 1/2 cup water and pinch of salt
2. give 1 boil
3. add 1/2 cup milk stir well
4. give 1 more boil
5. add rice flour
6. while adding rice flour mix well continuously
7. keep the lid on it and give 2 steams
8. take the dough in plate once it cool down little bit (warm)
9. apply litlte oil on hand and knead smooth dough
10. keep it under wet cloth
C. *making and steaming modak*
1. take little pedha siza ball from dough
2. roll it (not thick not thin)
3. stuff with stuffing
4. give modak shape
5. till then pre heat the cooker(remove whistle) or steamer
6. place the modak in plate / idli steamer plate
7. place 1/2 kesar strands on modak
8. steam modak in preheated steamer or cooker for 15-20 minutes
D. *Serving*
1. take hot modak in plate
2. open the modak little bit
3. add 1 1/2 tsp of ghee on the modak
4. serve hot
