Ingredients:
- 1/2 cup (128g) nut or seed butter of choice
- 3 tablespoons (63g) maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1/2 cup (48g) rolled oats
- 1/3 cup (40g) gluten-free oat flour or 1/2 cup (48g) almond flour
- 2 tablespoons cocoa powder
- 1/4 teaspoon salt, use half if your nut butter is salted
- 1/4 cup chocolate chips
Method:
- In a small mixing bowl, combine the nut butter, maple syrup, and vanilla extract. Mix until smooth, and then fold in the oats, flour, cocoa powder, and salt, if using. Stir in the chocolate chips.
- Scoop into balls and then roll between your palms to smooth out the dough balls. If the dough seems sticky, you can slightly wet your hands to help prevent the dough from sticking.
- Eat immediately, or store in an airtight container in the fridge for up to two weeks.
