Ingredients:
- 340 g broccoli florets chopped
- 2 cups of cooked chickpeas
- 1/4 large onion diced
- 1/3 cup pecans chopped
- 1/3 cup raisins
- 1 apple diced
- 1/3 cup parsley chopped
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste
- 1 spoon lemon juice
- 1 spoon olive oil
Method:
Combine the chopped broccoli, drained and rinsed chickpeas, red onion, pecans, raisins, apple and parsley to a large bowl. Pour the lemon juice, olive oil over top, alongside the additional salt and pepper. Mix well to combine and enjoy!
