Ingredients:
- 1 ½ cups cooked red kidney beans, rinsed
- 1 cup cucumber, diced
- ½ red onion, finely chopped
- 1 cup cherry tomatoes, halved
- ¼ cup bell peppers (any color), chopped
- ¼ cup fresh cilantro, chopped
- For the dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced (optional)
- ½ tsp cumin powder (optional)
- Salt and black pepper to taste
Instructions:
- In a large bowl, combine the boiled kidney beans, cucumber, red onion, cherry tomatoes, and bell peppers.
- In a separate small bowl or jar, whisk or shake together all the dressing ingredients.
